Promoting healthy snacking at the workplace for workers in the low social-economic class: stimulating vegetable intake by employers and caterers

Doel

Voeding op het werk is vaak minder gezond dan thuis, vooral arbeiders uit de lage sociaal-economische klasse zijn op het werk minder geneigd om voor gezonde voeding te kiezen. Het hoofddoel van deze studie was om het nudge-effect te onderzoeken van het meer opvallen van een gezonder assortiment op de werkplek op de voedselkeuze van werknemers met een lage SES.

Aanpak/werkwijze

Er is een kwalitatief onderzoek uitgevoerd met productiemedewerkers met een lage SES achtergrond (N=33) van een zware industriële productiefaciliteit in Nederland. Dit leverde input op voor een interventie met automaten. In een selectie van vier automaten, twee op productielocaties en twee op kantoorlocaties, werden betere keuzeproducten in het assortiment (25%) geïntroduceerd en gemengd (6 weken) en gegroepeerd als blok (6 weken) gepresenteerd. Werknemers die een product uit de automaten kochten (N=214) werd gevraagd naar de opvallendheid van betere keuzeproducten, attitudes, gezondheidsbewustzijn, invloed van sociale normen. Het assortiment is nog eens 13 maanden in de automaten gehouden om longitudinale effecten te bestuderen, en vervolgens werden de betere keuze snacks gedurende vier maanden geïntroduceerd in nog eens elf automaten om de externe validiteit te testen. Verkoopgegevens werden verkregen van de gehele interventieperiode februari 2019 – december 2020. Gedurende deze periode is verkoop van voeding flink verschoven van fysieke kantines naar online food apps, er is daarom in dit onderzoek een online besteld app/kantine ontwikkeld. In een experiment met lage SES medewerkers (n=956) werden productpositionering veranderd (gezonde producten bovenaan versus onderaan) en timing van de bestelling voor de lunch (naar verwachting binnen 30 minuten bezorgd ten opzichte van de volgende dag).

Resultaten

Uit de kwalitatieve studie blijkt dat sommige werknemers met een lage SES een voorkeur hebben voor gezondere producten in het assortiment, en gezondheidsbewustzijn lijkt de drijvende kracht hiervoor. De nudge in de automaten werkt effectief, de verkoop van de beter keuze snacks, hoewel klein, blijft in de loop van de tijd stabiel. In de online bestel app/kantine met de gezondere producten bovenaan werden significant meer gezondere producten gekozen (52.2%) dan bij gezondere producten onderaan (47.7%). De individuele gevoeligheid voor de nudges wordt nog niet duidelijk begrepen, bovendien vereist het natuurlijke karakter in een real-life omgeving van het onderzoek voorzichtigheid bij het interpreteren van de effecten.

Samenvatting van de aanvraag

This project aims to deliver strategies for companies employing people with lower socio-economic status (SES) to stimulate (i) consumption of healthy snacks at the workplace and that (ii) can be implemented by employers and other stakeholders because it fits in their (HRM)strategy and catering policy and their daily work pattern. The project is conducted in cooperation with DAF Trucks employing around 3.000 low-SES workers in co-creation with their food caterer Sodexo, Bruil who is employing around 250 low-SES workers, and Greenco producer of snack vegetables among the brand Tommies. The approach followed in this project is to make the healthy snack choice routine behaviour by increasing the availability during the several consumption moments including nudging. The challenge lies in designing the choice context such that consumers are “subtly guided” towards the more desirable choices, even in the face of the undesirable choice options. The companies involved have been developing several employee vitality programs and facilities, however a healthy food intake is still a problem. Increasing availability of healthy snacks and nudging fits with the current companies policies as they do not want to be patronizing and tell their employees exactly what to do. In contrast, they have high expectations of interventions that do not require much effort, money, time of employees, but are at the same time well linked to the employees eating habits and motivations. DAF caterings policy include a focus on healthy products including a pricing policy that makes healthier products cheap for their employees. Still employees choose relatively more the unhealthy snacks, particularly during the night-shifts employees tend to eat rather unhealthy. The vending machines in place carry the common snacks e.g. candy bars and sugar drinks, and no healthy choice option. Bruil offers no catering in general except when shifts taking longer than regular hours. Recently Bruil has introduced fruit at work. Employees at Bruil make use of the mobile cafeteria very regular, which sites just outside the production facilities. The working plan includes the following elements: this project starts with an input from employees, practical experience and scientific literature (WP1). This information is input for our three-step intervention approach starting with ‘proof of principle’ studies (WP2), in which short-term tests are performed to understand how healthy snack availability at work may lead to higher intake. Followed up with ‘proof of concept’ studies (WP3), building on the findings from the former tests, either adapt the intervention, in order to better understand the influence of various situations and type of employees who respond to nudges. Third, the most potential nudge will be scaled up, implemented, and examined in a ‘proof of implementation’ study over longer time period approximately one year (WP4). The research requires intensive interaction with the companies, therefore the process of implementing the intervention is monitored during the project (WP5). Findings of the project will be disseminated both internal in the companies and the external networks of the parties involved, including (HRM) conferences, and social media (WP6). The project is innovative because, (1) we will develop NUDGES in order to increase the consumption of healthy snacks among the target group low SES. (2) Co-creation and intensive interaction between companies and researchers: social innovation. (3) Stakeholder involvement as crucial for implementation of interventions. (4) Behavioural sciences as key element to develop nudging strategies that create impact, motivation and activation. The project will be conducted in three years: 2018-2020.
